Ingredients for quinoa and chickpea balls
You can make 6 normal sized balls with the following quantities. However, you can change the proportions and amounts as needed.
Ingredients for the balls
- 180 g chickpeas
- 200 g quinoa
- 75 g breadcrumbs
- 1 clove of garlic
- 1 tablespoon of soy sauce
- 2 teaspoons of coriander
- 1 red pepper
- 0.5 teaspoon of salt
- 0.5 teaspoon black pepper
Ingredients for the dip
- 1 clove of garlic
- 4 tomatoes
- 1 onion
- 240 ml vegetable stock
- 2 tablespoons of olive oil
- 1 large carrot
Preparation of the balls
- Soak the chickpeas in warm water for several hours, preferably overnight. This makes them softer and can then be processed better.
- Then let them cook for 60 minutes. During this time, you can start preparing vegetables and quinoa.
- Wash the quinoa with plenty of water and then boil it in water. After 5 to 10 minutes, the pseudo-grain is ready. If you want it a little softer, you can cook it a little longer.
- Chop the peppers and coriander into small pieces.
- As soon as the chickpeas are ready, you can process them together with the garlic in the stand mixer.
- Then stir in the quinoa and pepper.
- Finally add the remaining ingredients, stir everything well and put the dough in the fridge for 30 minutes.
Preparation of the dip
- To make this sauce, tomatoes, garlic and carrots are processed with a blender. Then add the vegetable stock.
- Now heat the olive oil in a pan over medium temperature. Let all the ingredients simmer for 10 minutes.
- This makes the sauce more intense and a little thicker.
- When the time is up, you can now take the quinoa and chickpea mixture out of the refrigerator and start forming balls. Then add them to the sauce.
- Let everything cook for a few minutes until the balls are cooked through.
Variation: tomato sauce with coconut milk
This variant of the sauce with tomatoes and coconut milk also tastes delicious.
ingredients
- 2 tomatoes
- 250 ml coconut milk
- Oregano, salt and pepper (for seasoning)
- 1 teaspoon of curry
- 15 ml of olive oil
preparation
- First, clean and peel the tomatoes. Then process all the ingredients (except olive oil) with the coconut milk and spices in a blender.
- Then put the sauce in a pan with hot olive oil and let it simmer for about 10 minutes.
- When the 10 minutes are up, you can add the quinoa and chickpea balls. Let everything simmer for another 5 minutes.
Despite their different flavors, both sauces go perfectly with our quinoa and chickpea balls. You can cook some white or brown rice with it, or a salad would also be a suitable side dish.
